Every good restaurant is built on a culinary foundation. A cuisine, a time period, specific techniques. So when management partners, Julie Darling and Sean Mulroney of C.O.A.L. (Chicago Original Authentic Legitimate) sat down to hash out a new concept for the dana hotel and spa, they wanted a place where friends and travelers alike could truly experience Chicago hospitality and worldly cuisine. Their vision brought renowned chef Rodelio Aglibot into the kitchen to create the menu as Culinary Director, while Nathan Huntington will oversee the kitchen as Executive Chef adding his creativity and daily specials to the culinary offerings. With extensive research Argent Restaurant and Argent Raw Bar was born with an emphasis on looking at the basics and the true foundation of Chicago. Argent sets the standard in “Comfort Chic” cuisine.
Rooted in Chicago’s River North, known as the “culinary district”, Argent is set to be the neighborhood go-to place for both locals to international travelers. Open seven days a week into the late night for breakfast, lunch, and dinner.
By definition, Argent represents the silver metal on a coat of arms that is left unadorned. In choosing this moniker for their new restaurant, the team is building a strong and lustrous foundation as Chicago moves into a new culinary era. The redesign, of the space, with the help of Rocky Albazi (ALBAZI AND ASSOC), is almost ninety percent green and more importantly, comprised of repurposed materials using some materials that was part of the prior concept. Argent’s design reflects today’s contemporary world and is aligned with award-winning dana hotel and spa alongside hard steel elements paying homage to the industrial period. The second floor will usher in a Raw Bar and private dining space dubbed Peristyle for up to 50. While giving new life to existing elements on the first floor, the addition of a unique floating bar will reinforce the industrial motif.
